Having trouble with different focus modes, and setting them up

Hello.
I have one question.
I have configured my sleep focus mode to go off every night at a particular time. Whenever the focus is active, I have notifications still coming in from messages, mail, WhatsApp,etc. I have both critical alerts and time sensitive notifications turned off.
I thought there was a way to silence All incoming notifications from people and apps.
Is there any way to select all of the contacts at once under the ad people screen, or would I have to add people individually? The same goes for apps.
Just a little bit confused because I know with some apps, I would like notifications.
I also see this behavior under the do not disturb focus mode. I have turned off the share across devices setting.

Go to setting, focus, slide to reduce interaction, slide to people and make sure they are off, same with apps.

From there you should see people and apps buttons. You turn on who and what you want from there. Or that is how mine looks.
