I've brought this idea up on Mastodon, but haven't heard of any responses. It seems some audio recording/editing apps do not like it when you plug headphones in, more specifically when you use voiceover, as I obviously can't test without it.
My phone has been updated to the latest IOS, and if this helps, I'm using an IPhone 13 Pro.
Last week, I discovered that Backpack studio and Ferrite recording studio lag horribly when headphones are plugged in. Usually, this doesn't occur in backpack studio until we turn the mic oh, or if I need to go to the settings to change mic effects.
What happens when headphones are plugged in: Voiceover becomes extremely laggy and studdery, making it impossible for me to complete any tasks in those apps. Apps like Just press record seem to behave fine, but this issue appears to be happening in apps that are more specialized, like backpack and ferrite, , where people use these apps for the sole purpose of recording and/or editing good quality content.
This is a major problem because if you're like me, you prefer to edit and record audio with headphones plugged in, so voiceover doesn't proudly announces itself in the midst of your recordings, and even if you can turn on do not disturb, there may be some sounds that come through your phone's speakers that also can interrupt.
I realize these apps haven't been updated in a while, so either the devs just need to put out a more stable update, or apple has broken things massively.
Can several of you test out Backpack studio, Ferrite, or even Hokusai editor if you have it, and see if the headphone issue is occurring on your end? If so, it might be time to ask the devs to check into this matter.

A workaround
To use this you either need to have a braille display with it or are not planning on using the phone for anything while recording. Go to the button you press to record, turn speech off and doubletap. Then you should be able to Twofinger doubletap to stop the recording and turn speech on. HTH!
