I have had my watch paired with the iPhone SE3 for a few months now. When I got the watch, I was of the understanding that it was the SE2, though I have come to doubt this, as it never got the update to Watch OS 11. So, guessing it is the original SE. Anyway, it has been working with my iPhone SE3, but now, when I try to pair with the iPhone 16, it acts like it wants to, asks me to enter my pin, but then after entering my pin, it pops up a message on the phone saying that it couldn't pair. What I don't recall is if I paired the watch with the phone while still on iOS 17, or if I was already on the 18 beta, because I didn't have the SE3 for long before putting the beta on it. But the new 16 is on iOS 18.1.
Should I completely reset the watch and try it again, or is this combination just not going to work together?

Got it working!
So, I don't entirely know why it refused to just transfer over. By the way it asked if I wanted to link the new phone with the watch, I understand that it should work, but tried it multiple times with no luck. When I reset the watch and went through setup from scratch on the new phone, it worked just fine. Now I'm up and running.
