The developer has responded to my e-mail with some possibly good news, read below:
Dear Tunmi,

Thank you for contacting us with your feedback and suggestions. I’m glad to hear you are liking the app and its VoiceOver functionality, as we’re currently looking into the possibilities for more accessibility improvements. We know that this is an area we can still improve on with our apps, so we are going to take your feedback into account for this and use it for our discussions. Hopefully we’ll be able to implement some of your suggested improvements, along with other features, at some point in the future. I can’t make any promises about this though, but we’ll definitely go over it for a potential update.

Deactivate Direct Touch

How did you deactivate direct touch in this app? I used to see it in the router but it doesn't seem to be there now.

In the podcast, I actually had to cut out the part where I was struggling to disable it. It's much simpler on an iPad than it is on an iPhone, which is what I was using. Basically, you have to find a location on the touch screen while keeping VoiceOver focused on the keyboard, then attempt the rotor gesture and try to find Direct Touch.

I used a mostly accessible app called Voice Notes Pro, which seems to be able to record anything, including apps that make sounds. There are a lot of weirdly labeled buttons, but most are self explanatory, others, you have to see what they do.
