Yes, very much so. I did my master's thesis on this exact subject and got to use ProTools to record and mix a full band. VoiceOver gives access to all parts of the program including edit and mix windows, plug-ins and meters.
It's best to use ProTools with a control surface as this makes moving around much faster than interacting or using the item chooser to find faders and controls.
