Might be worth posting your country and whether you're looking for one that is built into your apartment/house or one that's part of a plug in heater. The built in ones especially can vary by country.
The iDevices thermostats are quite nice. The app itself is pretty accessible, but if you have an Apple TV, Homepod, or other device that can be used as a home hub, it also integrates nicely in to the home app from Apple. Rarely do I ever actually need to open the iDevices app. Having said this, I don't know how easy they are to find anymore. And lastly, pretty much everything I have said about the iDevices can be applied to other models previously mentioned in this thread. But the iDevices one is the only one I have any experience with.
I used an early generation of the Google Nest thermostat for years, recently got the 4th gen, and it works great with Alexa, and I'm sure with Google's voice assistant stuff as well.
I recently purchased the Google Nest thermostat, I assume it is the latest one. I downloaded the Google Nest and Google Home apps. I control the thermostat through the Google Home app. I also have an Amazon Echo. Can anybody describe how they were able to successfully pair the two devices. Please don't link to online instructions as that proved fruitless. Either the instructions are incorrect or the U/I of the apps have changed dramatically. In the United States if it makes a difference.

With the Nest, I used the Matter protocol to control it with Alexa. Basically, you add a new device on the alexa app, choose matter, then scan a QR code that is displayed on the Nest itself. This will require sighted help, because you have to go into the menus of the Nest to have it display the QR code as I remember.

Good luck, having recently integrated several home devices, this whole thing with hooking it to the Echo devices seems needlesly complex, but using Matter helps.
