I need to just double tap and set the timer automatically, because I can't speak into the phone while I'm on Skype. I am playing chess, and want to set a timer for two minutes then make my move.
Hi. I also like the idea of having icons that can be clicked to start timers because it would be faster then opening the clock app and setting up a timer and I would rather not use siri if I don't have to. I just think talking to your phone with other people around is strange. I usually only do it when nobody can hear me.
I think that the above will also work on the Apple Watch.
I (sometimes) have the Timer set as a complication on my Watchface. It is a simple matter to start and stop the timer right from my wrist.
If you do, why not just have the wait action assigned to the value you want the timer to run for then use a play sound action to make a noise. You could even save tis as a today widget for fast use.

SIRI
Could you just ask Siri to set timer for two minutes?
I need a faster reaction time

For Chess
Open the Clock App.
open the timer tab.
Set a two minute timer.
When you flip to the clock app again, the 2 minute timer setting will be remember.d You can select cancel and start as required while playing.
Apple Watch
