I use the Square register ap, along with the Square stand to run my food service business. It takes too long to check a customer out using my current method of swiping through the list of previously entered items in the library, then making the correct selection, clicking add, then moving to the next item ordered.
I'm wondering if there is a way to "touch" select these items in the same way the touch typing setting allows us to more quickly enter text.
I want to access the category I want, let's say, lunch, then hold my finger down while moving around the screen until I hear "lunch special", then lift my finger, selecting that item.
Another alternative thought is to be able to access the item library items using a Bluetooth keyboard. With this option, I'd press the letter l, and it would jump to the first item beginning with l, and the subsequent items with repeated presses.
Any thoughts on these possibilities?

I don't use these apps but have you considered the use of a full-sized Bluetooth keyboard to work inside these apps? This may speed up the interactions with the apps.

I appreciate your feedback. Unfortunately, the issue is not a matter of not being able to type fast enough, or access certain keys quickly enough.
The screen shows a pattern or grid of items up for sale. blt, drip coffee, soda, candy bar, etc. When cashiering, you must double tap the item, then click add, then select the next item, click add, then repeat the process until the transaction is completed.
the vo user has to either swipe through the items, or tap in various parts of the screen until the correct selection is made.
I am trying to see if it is possible to drag the finger across the screen until the correct item is heard, lift the finger, and have that item be selected and clicked. In the same way that the touch typing feature works.
I don't prefer to use touch typing for other things, but feel this might speed things up.
Alternatively, if I wanted to ring up a muffin, I'd like to press the m key, repeatedly while the system goes through mocha, monster, milk, etc. until I hear muffin. At that time, press enter, or space bar to make the selection.

A couple things to try
Have you tried the split-tap method? Essentially, drag one finger around the screen until you hear what you want then tap a second finger down. It's quicker than double tap if you get the hang of it. Do the items change location? If not, you can learn the layout of where they are as if they were buttons.
First Letter Navigation
I suggested the use of a keyboard thinking that if you use first letter navigation then you could reach the desired item much quicker.
Item chooser?
Not positive how well it'd work, but possibly try the item chooser, opened by two finger triple tapping? From there, you could type mo and scroll down to mocha and dayouble tap using a bt keyboard.
