iOS and iPadOS
I need to take notes today, as I have an important appointment. What is the best way for a blind person to do it, using IOS 10.2.1? I want to record all the very important information from the appointment.
In a pinch, I guess you can use your iPhone's native notes app. Otherwise, you can always download an app called Access note which was written by the AFB. Both might function well enough to suit your needs, provided you're a fast enough note-taker using either the onscreen iOS keyboard or a good third-party keyboard like MBraille.
Hello, notes and a bluetooth keyboard have served me well in the past. I got one recently and I'm so glad I did. If that's not possible, then if people are alright with it, then recording your meeting for later transcribing might help, but again that may not be viable. Sorry I can't be of more help.

If you want to sync your notes...
If you want to have your notes synced to the cloud, I'd remomend Simplenote. It's free and accessible.
I would use notesy. It syncs
I would use notesy. It syncs with dropbox. I used that all the time when I was in class.
