Hello.
The first thing to say, I do NOT have a computer, just my iPad and iPhone.
I want to record my voice at the same time as I record audio. It doesn’t have to be in stereo. As long as it is recorded. I know about multitrack editors and have one but that is not what I seek. I seek a way to record the audio of my device, with headphones prefered, and my voice.

Headphones are a problem. The only thing I can think of is to take the device that will be the source of the audio, plug your headphones in, then set one of the ear plugs as close to the other device's microphone as possible. That is, record your iPhone with your iPad, or the other way around.
It will be horrible quality, and you will have to experiment a lot to get your voice level and the audio level balanced.

The only unaccessible item is the instruction video (no audio). Also, the editing tools are difficult to use. It’s free, so at least it is worth a look.

I can make it record the game, but I cannot make it record VoiceOver. It records game just fine. I am trying to show a game to a friend who is far away.

I used the internal mic and speaker with notifications on. The recording also picked up my taps.
Audio
You cannot directly capture audio from iOS. If you want to do that, you will need a computer with a dedicated hardware mixer or virtual audio capture software like Audio Hijack on macOS. If you don't mind a relatively low quality recording, you could start recording on one device while using VoiceOver and the app on the other. The first device will record everything coming out of the speaker of the second device as well as your voice when you speak. Recording from headphones isn't advisable as the output will either be too quiet or sound very bad.
You may be able to connect a USB mixer to your device with the lightning to USB camera adapter. I haven't personally tried this so can't say if it would work. Has anyone else tested this? Does iOS send audio through a mixer and allow applications to record it?
Sadly, this is the only method I know of that will work reliably. The audio system is too restrictive thanks to Apple's sandboxing and will probably remain that way.
