Hokusai Audio Editor is certainly the best choice; A really great work has been made to make it VO-Friendly. And if you need help, the support team is reactive and helpful. If I'm not wrong, there's also a podcast related to it on the Applevis website.

Hi. I’ve just tried to use Hokusai to record a track over another one and it worked fine. I’m wondering how to just record my vocals without the track playing in the background and still be able to hear it while I record. I hope that makes sense.
I'm not sure if I'm answering the right question but if you're trying to record vocals over an instrumental or something without the instrumental being in the recording, just put the instrumental in as a separate track and when you go to record the vocals turn on play existing project and it will play through your headphones.
